Tasting Note
Concentrated citrus and white-fruit with intense gunflint/mineral flint, white flowers, dill/herbal notes, saline streak and vivid crystalline acidity. Powerful, ageworthy, with a long savory finish and subtle oak spice.

Oysters, scallops, lobster, grilled white fish, sole meunière, roast poultry with cream or mushrooms, veal sweetbreads; Asian: sashimi/sushi, ceviche, prawn tempura, light Thai/Vietnamese seafood dishes and citrusy or ginger-forward preparations.

Production Method
Hand-harvested Sauvignon; fermented and aged ~12 months in large oak barrels (including Dagueneau's cigar-shaped formats) with lees contact; low yields, sustainable/biodynamic practices and minimal intervention.
