Perfumed dark cherry and red‑currant with violet, forest floor, clove and tobacco. Medium‑full body, firm fine‑grained tannins, bright acidity and pronounced mineral backbone; long savory, peppered finish.

Roast duck, lamb, mushroom risotto, beef short rib; Asian: Peking duck, char siu or hoisin pork, miso‑glazed aubergine, soy‑seared mushrooms with rice noodles.

Hand‑harvested; biodynamic/organic viticulture. ~80% whole‑cluster fermentation, extended maceration; aged c.12–18 months in ~40% new French oak.
