Perfumed red and black berries, rose petal, earth, anise and spice. Medium‑to‑full body with fine, structured tannins, bright acidity and minerality; long, savory finish with tobacco and crushed-stone notes.

Western: roast lamb, beef short ribs, mushroom risotto, duck confit, aged comté. Asian: Peking duck, char siu or hoisin pork, miso-glazed aubergine, soy‑braised beef, mushroom ramen.

Production Method
Organically and biodynamically farmed; ~90% whole-cluster fermentation in 2018, indigenous yeasts; aged ~16 months in French oak (c.20–35% new). Minimal fining, light filtration.
