Tasting Note
Powerful, mineral-driven white: citrus blossom, green apple, white peach, struck flint and jasmine with creamy, saline texture and a long, lemony, intensely focused finish.

Food Pairing
Western: lobster Thermidor, buttered scallops, roast chicken with cream sauce, aged Comté. Asian: miso-glazed black cod, soy/ginger steamed sea bass, delicate sushi/uni, Cantonese lobster.

Production Method
Organically farmed and biodynamic viticulture; vines ploughed by horse; hand-harvested from two small plots; fermented and aged 12–16 months in French oak (older barrels), medium toast.
