Tasting Note
Medium-bodied Pinot Noir: ripe red and black cherry, plum, rose petal, spice, forest-floor and savory mineral notes; supple tannins and long, precise finish.

Western: roast lamb, duck confit, mushroom risotto, aged cheeses. Asian: Peking duck, char siu, miso aubergine, shiitake stir-fry, grilled salmon with soy-ginger glaze.

Production Method
Hand-harvested; organic/biodynamic viticulture. Village cuvées often destemmed, some parcels fermented with partial whole-cluster; fermented in temperature‑controlled vats and aged in French oak barrels.
