Tasting Note
Red and black cherry, cassis, light white pepper, Provençal herbs and subtle smoked-meat/forest-floor notes; medium-bodied with supple, fine tannins, bright acidity and a long, spicy finish.

Food Pairing
Western: roast duck, coq au vin, roast lamb, mushroom risotto, grilled salmon. Asian: Peking duck, char siu, miso-glazed fish, teriyaki chicken, shiitake mushroom stir-fry.

Production Method
Organically farmed with biodynamic practices; ~30% whole-cluster fermentation, cold pre-fermentation maceration on indigenous yeasts; aged ~15 months in French oak (≈20% new).

Vineyard Info
Les Evocelles was Vougeraie’s first parcel (acquired/planted mid-1960s). Vougeraie farms the 3.13 ha parcel organically (Ecocert certified 2001) and manages vineyards biodynamically under the Domaine de la Vougeraie project founded in 1999.
