Tasting Note
Elegant, highly perfumed Pinot Noir with rose and violet florals, ripe red cherry and raspberry, subtle black fruit, forest floor and spice notes, bright mineral core, silky tannins and a very long, refined finish.

Food Pairing
Western: roast duck, duck à l'orange, roast venison, beef entrecôte, mushroom risotto, truffle pasta. Asian: Peking duck, hoisin/char siu pork, braised beef short ribs, mushroom hotpot, miso-glazed salmon.

Production Method
Organic/biodynamic viticulture; 100% whole-cluster, cold pre-ferment maceration, ~21 days maceration; basket/vertical press; 16–17 months élevage in French oak (approx. 28% new).
