Tasting Note
Silky Pinot Noir: red and black cherry, blackberry and violet with sweet spice, undergrowth and a hint of tomato leaf and licorice on a long, lively-acid finish.

Food Pairing
Roasted beef, game birds (quail, pheasant), duck breast, mushroom risotto, aged Époisses or Comté; Asian: Peking duck, char siu/roast pork, miso-glazed fish, teriyaki chicken, mushroom yakitori.

Production Method
Organically/biodynamically farmed; hand-harvested; cold pre-fermentation maceration (~5 days), total maceration ~19 days; aged ~16 months in French oak (≈20% new).
