Tasting Note
Fragrant citrus, pear and peach with orange oil, baking spice and toasty oak; flinty/saline minerality and a satiny, incisive palate finishing long and stony.

Food Pairing
Western: lobster, scallops, roasted chicken with herbs, creamy risotto, goat cheese. Asian: sushi/sashimi, miso-glazed cod, steamed whole fish, tempura, lightly spiced Thai or Cantonese seafood dishes.

Production Method
Biodynamic viticulture; hand-harvested; fermented and aged in French oak (Allier/Cîteaux) with ~20% new oak for ~16 months; occasional bâtonnage; small blending from Pinot Gris/Blanc.
