Tasting Note
Pale lemon-gold; orchard fruits (apple, pear), citrus, hazelnut and saline minerality. Creamy, taffeta-like texture with bright acidity and a long, mineral finish.

Whole-bunch pneumatic pressing, 24h settling, fermentation on indigenous yeasts, 16 months élevage in barrels (~20% new), monthly bâtonnage, minimal intervention and light filtration.
