Tasting Note
Racy and precise: lemon oil, green apple and peach with butterscotch and hazelnut underpinned by graphite/mineral salinity. Silky texture, vibrant acidity and a long, complex saline finish.

Food Pairing
Roast chicken, butter-poached lobster, grilled salmon, pork loin, aged Comté; Asian: miso-glazed black cod, tempura, sushi (fatty cuts), Cantonese roasted duck, creamy Thai dishes.

Production Method
Organically and biodynamically farmed; hand-harvested, parcel vinified; fermented and aged in oak barrels (approx. 16 months, ~30% new); bottled according to lunar calendar.
