Tasting Note
Bright citrus and white flowers with ripe yellow fruits, toasted almond and hazelnut, chalky minerality and saline, precise acidity. Ample texture with integrated oak and a long, elegant finish.

Food Pairing
Western: roasted turbot, grilled scallops, poultry with cream and truffles, aged Comté. Asian: miso-glazed black cod, ginger–scallion steamed sea bass, sushi (fatty tuna), mild Thai coconut fish curry.

Production Method
Certified organic/biodynamic. Hand-harvested; whole-cluster pneumatic pressing (≈2h30); fermentation begins in stainless steel and finishes in oak; 15–16 months élevage in oak (≈20% new), followed by tank refining.
