Tasting Note
Concentrated black cherry, dried fig, licorice, dark chocolate, espresso, leather and dried rose; velvety, powerful palate with bright acidity, polished firm tannins and a very long mineral finish.

Food Pairing
Western: braised short ribs, ossobuco, venison stew, aged Parmigiano, blue cheese, dark chocolate desserts. Asian: Peking duck, char siu, Korean BBQ short ribs, spicy Szechuan beef, hoisin-glazed pork.

Production Method
Appassimento (grape drying ~70–80 days), stainless-steel fermentation at ~28°C with ~15 days maceration, slow fermentation/ageing in new French and American oak; 2017 aged ~24 months in barriques (50/50 French/American).

Founded by Romano Dal Forno in 1983, now run by son Marco. 34 ha (18 owned) in Val d'Illasi; high-density plantings, low yields, proprietary drying rooms; famed for small-production, collector-focused Amarone and Valpolicella.
