Tasting Note
Bright ruby with indigo hues. Raspberries, dark red cherry, rhubarb, freesia and rose with clay, charcoal and a hint of birch sap. Taut, saline tension with concentrated fruit and a bold, long finish.

Food Pairing
Western: roast duck, beef tenderloin, mushroom risotto, aged comté, charcuterie. Asian: teriyaki tenderloin, Korean BBQ, miso‑glazed cod, kimchi accompaniments.

Production Method
Hand‑harvested, sorted; ~90% whole‑cluster fermentation for ~15 days with pigeage and pump‑overs. Pressed, settled then aged 14 months in oak (≈40% new); racked, rested and bottled without filtration or fining.

Domaine David Duband (founded 1965; David took over in 1991) farms organically-certified holdings across the Côte de Nuits, owning small Grand Cru parcels in Gevrey‑Chambertin and neighbouring lieux-dits.
