Tasting Note
Deep, pungent nose of peony, rose, dark cherries, spice, liquorice and fresh truffle. Opulent, generous palate with ripe red fruit, savory spice and roasted hazelnut, fine tannins and long mineral finish.
Food Pairing
Western: roast duck, beef tenderloin, lamb, mushroom risotto, truffle dishes, aged cheeses. Asian: teriyaki or bulgogi beef, Korean BBQ, miso‑glazed fish, shiitake & soy braised dishes, rich noodle bowls.
Production Method
Hand‑harvested; sorted and vinified ~90% whole clusters. 15‑day vatting with 5–7 punchdowns and pump‑overs. Pressed, settled, aged 14 months (c.40% new oak) and bottled without fining or filtration.
