Tasting Note
Smooth, complex aromas of red and blue fruit marmalade with cigar, leather, hay and hibiscus notes. Caressing, subtle palate with velvety grain, light structure and delicate, persistent finish; excellent aging potential.

Food Pairing
Western: entrecôte or roast beef with smoked tarragon, lamb, duck breast, mushroom risotto, aged cheeses. Asian: Peking duck, char siu, beef bulgogi, hoisin‑glazed short ribs, shiitake mushroom stir‑fries.

Production Method
Hand-harvested, 80% whole‑cluster ferment, 15‑day maceration with punchdowns/pump‑overs; aged ~13 months (40% new oak), bottled unfined and unfiltered.
