Tasting Note
Concentrated yet elegant: dried plum, fig and black cherry with dark chocolate, licorice, leather and savory spice. Firm but ripe tannins, bright acidity and a long, saline-savory finish.

Food Pairing
Western: aged sirloin, braised short ribs, roasted game, mushroom ragù, mature hard cheeses. Asian: Peking duck, Cantonese roast pork, soy/teriyaki beef, rich Sichuan braises — pairs with umami, fatty and spiced dishes.

Production Method
Hand-picked grapes undergo appassimento on bamboo racks (~110 days), pressed in January, ~30-day fermentation in oak vats with indigenous yeasts, malolactic, then 5+ years aging in large Slavonian oak casks.
