Tasting Note
Concentrated dried cherry and black-plum fruit with dark chocolate, sweet tobacco, liquorice and warm spice; powerful yet elegant, silky tannins and bright acidity lead to an expansive, mineral-driven finish.

Western: braised short rib, osso buco, roast venison, aged Parmigiano-Reggiano, bitter chocolate desserts. Asian: Peking duck, Chinese red-braised pork (hong shao rou), Korean BBQ, mushroom hot pot, char siu.

Production Method
Hand-harvested, appassimento ~110 days on bamboo racks (arele), cryomaceration ~10 days, 30-day fermentation with indigenous yeasts, malolactic in year one, 5 years in Slavonian oak (15–30 hl).
