Tasting Note

Concentrated dark-plum and blackcurrant core with dried fruit, cedar, dark chocolate, violets, sweet black olive and savory spice; pronounced new-oak and saline/mineral undertones. Firm, layered tannins and a long finish.


Food Pairing

Western: grilled/roast beef, leg of lamb, venison, aged cheddar. Asian: Korean BBQ (galbi), char siu, Peking duck, Sichuan beef or rich teriyaki dishes.


Production Method

Hand-harvested Bordeaux-varietal parcels fermented separately; matured ~10–15 months in French and American oak (significant new oak), then blended and bottled.
