Tasting Note
Concentrated citrus and yellow orchard fruit with lime blossom, marzipan and saline mineral notes; creamy mid-palate, bright acidity and a long, savory finish.

Oysters, seared scallops, lobster with butter sauce, roasted sea bass, roast chicken with herbs, creamy pasta; Asian: sushi/sashimi (salmon, tuna), miso-glazed cod, tempura prawns, steamed fish with ginger and scallions, Vietnamese grilled prawns.

Production Method
Estate-grown Sauvignon/Sémillon; fermented and aged ~18 months in French oak (portion new), long élevage in barrel; estate vinification, in conversion to organic.
