Tasting Note
Concentrated, mineral-driven Grand Cru: white peach, lemon zest, almond, honeysuckle and wet stone. Chalky salinity, bright acidity, layered texture and a long, focused finish that develops honeyed and nutty notes with age.

Food Pairing
Western: lobster, scallops, creamy shellfish risotto, roasted chicken with beurre blanc, mushroom or truffle dishes. Asian: miso-glazed black cod, steamed sea bass with ginger and soy, lobster or crab dim sum, chawanmushi, richer Thai coconut-based curries.

Production Method
Biodynamically farmed; hand-harvested grapes pressed whole, indigenous-yeast fermentations in fine-grain French oak barrels (limited new oak), aged on lees for c.18–24 months; minimal intervention, gravity handling.
