Tasting Note
A powerful, full-bodied Puligny: spring flowers, white peach and ripe citrus layered over quince, toasted oak and saline minerality. Satiny texture, concentrated fruit and bright acidity with a long, tensioned finish.
Food Pairing
Western: burbot, lobster, grilled scallops, creamy mushroom risotto, veal blanquette. Asian: miso-glazed black cod, steamed sea bass with ginger & scallion, tempura prawns, Cantonese steamed fish, sushi (rich white-flesh fish).
Production Method
Vines farmed biodynamically; hand-harvested, gentle pneumatic pressing, barrel fermentation and extended élevage in oak with a portion of new barrels; minimal intervention in cellar.
