Tasting Note
Ripe citrus, pear and white flowers with toasted hazelnut and a pronounced mineral core; full, satiny texture, bright acidity and a long, powerful finish.

Food Pairing
Western: foie gras, lobster with beurre blanc, roasted chicken in cream sauce, pike-perch, mild cheeses. Asian: miso-glazed cod, steamed lobster with ginger & scallions, rich sushi (toro), Cantonese roasted chicken, Thai green curry with balanced spice.

Production Method
Manual harvest; 100% Chardonnay pressed as whole grapes/whole berries, 24h settling; alcoholic and malolactic fermentations in oak; ~18 months élevage with portion in tank and ~20% new oak.
