Tasting Note
Fresh citrus, white peach and preserved lemon with honeyed pear, white flowers, toasted hazelnut and a saline oyster-shell minerality; creamy yet focused, finishing long with gentle spice and toasty oak.
Food Pairing
Western: grilled lobster, seared scallops, roasted or poached chicken, mushroom risotto, creamy pasta. Asian: miso-glazed black cod, steamed white fish (Cantonese), sushi (rich tuna), tempura seafood, light Thai coconut curry.
Production Method
Biodynamic viticulture; long gentle pneumatic pressing, 24h settling, alcoholic (and malolactic) fermentation in oak barrels (≈25% new), 12 months in barrel then ~6 months in tank, minimal fining/filtration.
Vineyard Info
