Tasting Note
Mineral-driven, precise Chardonnay: citrus and white‑flower aromas with green apple, lemon zest, chalky stone minerality, subtle hazelnut and brioche. Satiny, incisive palate with brilliant acidity and a very long, chalky finish.
Food Pairing
Western: lobster with beurre blanc, roasted sweetbreads, scallops, foie gras, roast chicken, buttered sole. Asian: sushi/sashimi, tempura prawns, miso‑glazed black cod, Cantonese steamed fish, creamy coconut seafood curries.
Production Method
Hand-harvested; biodynamic viticulture. Whole‑berry pneumatic pressing; alcoholic and malolactic fermentations in oak casks (≈25% new). 12 months in oak followed by 6 months in tank; light fining and minimal filtration.
