Tasting Note
Fresh, fleshy attack of verbena and white fruits, evolving to a smooth, saline and mineral mid-palate with citrus, hazelnut and light floral notes; precise, medium–full-bodied with a long, stony finish.

Seared scallops, crayfish quenelles with Nantua sauce, roast chicken with cream sauce, mushroom risotto; Asian: miso-glazed black cod, tempura prawns, lobster with yuzu beurre blanc, richer sushi (salmon, toro).
