Tasting Note
Citrus and white orchard fruit with hazelnut, orange peel and dried-fruit notes; saline, mineral backbone, medium–full palate with toasted oak, buttered pastry and a long, focused finish.

Food Pairing
Seared scallops, crayfish quenelles (Nantua), lobster with beurre yuzu; roasted chicken with mushrooms, foie gras, creamy cheeses; miso-glazed black cod, tempura prawns, sushi (fatty fish).

Production Method
Hand-harvested; whole-grape pressing, 24h static settling; alcoholic and malolactic fermentations in oak; 18 months élevage (≈25% new oak) with 6 months tank assemblage.
