Tasting Note
Aromas of white peach, apricot blossom, lemon zest and white flowers with subtle vanilla/oak. Saline, stony minerality, crisp acidity, broad textured mid-palate and a long, precise citrus-tinged finish.

Food Pairing
Grilled scallops, lobster or prawns, roasted chicken with cream sauce, foie gras, creamy pasta (western); miso-glazed black cod, tempura prawns, sushi (fatty tuna), lightly spiced Thai prawn curry (asian).

Production Method
Biodynamic viticulture; manual harvest, pneumatic pressing; fermentation in oak barrels (≈22% new); élevage ~12–16 months in barrel then tank; light fining and light filtration.
