Tasting Note
Crisp green apple, lime and white peach with toasted almond, chalky mineral and sea-spray salinity. Racy acidity, medium-plus weight and a long, sapid finish.

Seared scallops, lobster or crab, roast chicken, creamy mushroom dishes; Asian: miso-glazed cod, sushi/sashimi, steamed fish with ginger, tempura vegetables.

Production Method
Biodynamic viticulture; hand-harvested; pneumatic pressing, 24h settling; alcoholic fermentation in French oak (≈22% new); 12 months in barrel then ~6 months in tank; minimal fining/filtration.
