Tasting Note
Perfumed citrus and white flowers with green apple, quince and flint. Subtle toasted-hazelnut oak, saline minerality and vibrant acidity; concentrated mid-palate and a long, precise finish.

Food Pairing
Western: lobster, grilled/roasted sea bass, vol-au-vent or roast chicken in cream, aged goat or Comté cheese. Asian: miso-glazed black cod, tempura prawns, steamed fish with ginger & scallions, sushi/sashimi, milder Thai or Vietnamese coconut-based dishes.

Production Method
Biodynamic viticulture; hand-harvested, long gentle pneumatic pressing; fermentation and élevage in oak (≈20% new); ~12 months in barrel then ~6 months in tank; light fining and minimal filtration.
