Tasting Note
Bright, precise Puligny with pear, citrus peel, white flowers, and toasted brioche notes. Medium–full, saline minerality, vibrant acidity and a long, clean finish (lemon, almond, baking spice).

Food Pairing
Western: roast brill, grilled seawater fish, lobster, shellfish, soft goat cheese. Asian: sashimi/sushi, tempura, miso‑glazed fish, yuzu or kombu‑seasoned shellfish.

Production Method
Biodynamic viticulture; manual harvest, long gentle pneumatic pressing, 24h settling, alcoholic and malolactic fermentations in oak (≈20% new), élevage in barrel then tank (≈18 months total).
