Tasting Note
Pure, focused Chardonnay with citrus, green apple, white flowers, almond and wet-stone minerality. Vivid acidity, sappy mid-palate and a concentrated, saline finish with a powerful, long mouthfeel.

Seared scallops or lobster (Western); sole or risotto with mushrooms; roast chicken with truffle. Asian pairings: sashimi or sushi, miso-glazed black cod, tempura prawns, and delicate Thai or Vietnamese fish dishes.

Production Method
Biodynamic viticulture; manual harvest, gentle pneumatic pressing, 24h static settling. Alcoholic fermentation in oak casks (≈22% new), 12 months in cask then 6 months in tank; light fining/filtration.
