Tasting Note
Crisp, mineral-driven Chardonnay with citrus, white peach, honeysuckle and flinty/almond notes. Vibrant acidity, saline backbone and medium-plus body with a long, precise finish.

Food Pairing
Western: seared scallops, lobster, roasted/poached chicken, creamy risotto, grilled sea bass. Asian: steamed fish with ginger & scallions, miso-glazed black cod, sashimi/sushi (fatty tuna), Cantonese roasted chicken.

Production Method
Biodynamic viticulture, hand-harvested; long gentle pneumatic pressing; oak fermentation (small % new oak), malolactic fermentation and 12–16 months ageing in barrel and tank.
