Concentrated Morello cherry and red berry fruit with floral rose and earth notes, black cherry, spice and subtle oak. Silky texture, ripe but firm tannins, fresh acidity and a long, saline finish.

Roast duck, lamb rack, beef bourguignon, mushroom risotto; Peking duck, char siu, miso‑glazed aubergine, soy‑and‑ginger beef, aged cheeses (Époisses, Comté).

Production Method

Hand-harvested, destemmed, fermented in vats with indigenous yeasts; extended maceration; aged 15–18 months in French oak barrels (mix of new and used); light filtration.
