Tasting Note
Ripe red fruits (strawberry, raspberry) and peach, brioche/toast, cocoa, blood-orange bitterness and smoky mineral spice. Silky fine tannins, vinous texture, lively acidity and a long saline finish.

Food Pairing
Western: smoked salmon, roasted duck breast, foie gras torchon, cured charcuterie, mushroom risotto. Asian: sushi (salmon/otoro), tempura, miso-glazed black cod, Peking duck, mildly spicy Thai or Szechuan dishes.

Production Method
Méthode traditionnelle: blend of Pinot Noir and Chardonnay; rosé component from short maceration/blending of still red Pinot Noir, bottle fermentation and extended lees aging before disgorgement.
