Tasting Note
Concentrated Pinot: red cherry, plum and dark berry fruit with violet/peony florals, spice, mineral earth and cocoa. Full-bodied, silky mid‑palate, fine-grained tannins and a long, powerful finish.

Food Pairing
Western: roast duck, herb‑crusted lamb, braised beef, game birds, mushroom risotto. Asian: Peking duck, char siu or hoisin‑glazed pork, soy‑braised short ribs, Korean bulgogi, mushroom hot pot or umami‑rich noodle dishes.

Production Method
Hand‑harvested from old vines, often fermented with a high proportion whole clusters (minimal destemming), regular pigeage, gravity‑fed winemaking and extended aging (~18–30 months) in mainly older oak barrels with little new oak.

Vineyard Info
Domaine Ponsot (est. 1872) of Morey‑Saint‑Denis owns large holdings in Clos de la Roche; the Vieilles Vignes cuvée is from very old vines (early 20th century plantings) and is a flagship Grand Cru bottling.
