Tasting Note
Concentrated red and black cherry, raspberry and baking spice with chalky mineral and menthol notes. Plush mid-palate, firm, chalky tannins and vanilla from oak; long, savory finish.

Food Pairing
Western: roast beef, lamb, game, mushroom risotto, aged Comté or Gruyère. Asian: Peking duck, char siu, Korean bulgogi, soy/miso-braised short ribs, teriyaki beef.

Production Method
Hand-harvested Pinot Noir; fruit 100% destemmed, ambient-yeast fermentation with extended maceration; aged ~18 months in French oak (high % new); minimal filtration.

Domaine Sérafin Père & Fils — family estate founded 1947. Christian Sérafin led the domaine; next generation (Karine, Frédérique Goulley) maintains traditional, low-yield, old‑vine viticulture in Gevrey-Chambertin.
