Tasting Note
Bright black cherry and blackberry with violet, spice, smoky oak and subtle truffle/forest-floor notes; saline minerality, fine chalky tannins and a long, savory finish.
Food Pairing
Western: roast duck, lamb, beef short ribs, mushroom risotto, charcuterie and aged cheeses. Asian: Peking duck, char siu, soy-braised beef, miso-glazed eggplant, grilled shiitake and soba with dashi.
Production Method
Hand-harvested; significant whole-cluster fermentation in 2019; cuvée matured 12–18 months in French oak barrels (moderate new oak); biodynamic vineyard practices.
