Tasting Note
Perfumed dark cherry and blackberry with rose petal, orange rind and forest‑floor notes; smoked-meat and exotic spice beneath. Medium‑full, fine-grained tannins, crisp acidity and a long, mineral, perfumed finish.

Food Pairing
Western: roast duck, beef bourguignon, lamb, mushroom risotto, aged Comté or Gruyère. Asian: Peking duck, miso‑glazed black cod, char siu, Korean bulgogi, earthy shiitake/miso dishes.

Production Method
Biodynamic viticulture; hand-harvested; high whole-cluster proportion (c.90%) with gentle extraction; matured 15–18 months in French oak (approx. 50–75% new).
