Tasting Note
Bright citrus and grapefruit, honeysuckle and preserved lemon, with spicy vanilla and subtle new‑oak. Creamy mid‑palate, pure acid drive and a long, mineral finish.

Food Pairing
Western: seared scallops, buttered lobster, roast chicken with herbs, goat cheese tart, creamy seafood pasta. Asian: miso‑glazed salmon, Thai green curry with prawns, Vietnamese lemongrass chicken, sushi (fatty fish).

Production Method
Hand‑harvested from Stoney Vineyard; barrel‑fermented in 100% new French oak barriques, matured ~12 months on fine lees, bottled unfined/unfiltered and cellared before release.
