Tasting Note
Concentrated black and red cherry, cassis, violet and rose-petal with mineral/iron notes; velvety, succulent mid-palate framed by fine-grained tannins, spice and a very long, sapid finish.

Food Pairing
Western: roast lamb, pigeon/pigeonneau, beef bourguignon, mushroom risotto. Asian: Peking/roast duck with hoisin, miso-glazed black cod, braised short ribs (Korean-style), earthy mushroom soba or udon.

Production Method
Biodynamic viticulture; ~30% whole-cluster (vendange entière) depending on vintage, indigenous yeasts; ~14 months élevage in oak (c.20% new); minimal filtration, unfined.
