Tasting Note
Concentrated red and black cherry, wild raspberry, violet and spice with sandalwood, iron-mineral and saline notes. Silky, layered palate with fine-grained tannins, bright acidity and a long, mineral-driven finish.

Food Pairing
Western: roast duck, venison, lamb, mushroom risotto, aged Comté and Gruyère. Asian: Peking duck, char siu, miso-glazed salmon, mushroom ramen, Korean bulgogi.

Production Method
Organic/biodynamic viticulture; hand-harvested; partly destemmed; indigenous yeast fermentation with extended maceration; aged in French oak barrels (≈20% new); bottled unfined/unfiltered.

Family-owned Domaine Arlaud of Morey‑Saint‑Denis (led by Cyprien Arlaud), biodynamic since 2004, works small parcels including a 0.2–0.3 ha Bonnes-Mares site on mixed limestone and clay soils.
