Tasting Note
Ripe red and dark cherry, blackberry, earthy truffle and forest floor, baking spices and subtle oak; silky texture, fine-grained tannins, bright acidity and a long mineral-tinged finish.

Western: beef bourguignon, roast duck, lamb, mushroom risotto. Asian: Peking duck, miso-glazed salmon, char siu, grilled shiitake or wagyu yakiniku, Korean BBQ.

Certified biodynamic farming; hand-harvested; ~30% whole clusters; indigenous yeasts; 14–16 months in French oak; bottled unfined/unfiltered.
