Tasting Note
Violet and rose aromatics with red and black cherry, cranberry and orange-rind notes; sweet spice, crushed stone minerality and saline undertones. Silky, svelte tannins, bright acidity and a precise, lingering finish.

Food Pairing
Western: roast duck, beef bourguignon, lamb, mushroom risotto. Asian: Peking duck, miso‑glazed black cod, char siu, grilled shiitake or yakitori, Korean BBQ (short ribs).

Production Method
Biodynamic farming; hand-harvested, indigenous yeast fermentation with ~30% whole clusters; aged ~16 months in oak (≈40% new); bottled unfined and unfiltered.
