Tasting Note

Bright, dark red. Aromas of black cherry, raspberry, peony, licorice and spice. Concentrated and saline with powdered, silky tannins, fine acidity and a long, precise finish.

Food Pairing

Western: roast duck, lamb, beef, mushroom risotto, aged cheeses (Époisses, Brie). Asian: Peking duck, char siu, beef bulgogi, miso‑glazed salmon, shiitake stir‑fry.

Production Method

Hand‑harvested old vines; fully destemmed; 3–4 day cold pre‑maceration; indigenous yeast fermentation with gentle pigeage; aged ~18 months in 15–20% new oak; minimal SO2 and light filtration.

Family domaine run by Jean‑Marie Fourrier since 1994. ~9–10 ha focused on old vines in Gevrey; practices organic/biodynamic-style viticulture and low‑intervention winemaking.
