Tasting Note

Perfumed red cherry and berry fruit with orange-rind, peony florals, spice and saline minerality. Fine powdered tannins, medium–full body and bright acidity, finishing long, precise and mouthwatering.

Food Pairing

Western: roast lamb, duck confit, beef bourguignon, mushroom risotto. Asian: Peking duck, Korean bulgogi, miso‑glazed salmon, char siu (BBQ pork), shiitake stir‑fries.

Production Method

Hand-harvested old-vine Pinot; fully destemmed, indigenous yeast fermentation, gentle manual punchdowns; aged 18–24 months in mostly neutral oak (≈20% new); minimal SO2, little/no racking, low-intervention approach.

Domaine Fourrier (Jean‑Marie Fourrier) — family estate since 1930s, ~8–10 ha in Gevrey and neighbouring villages. Focus on old vines (many >40–60 years), massale selection and meticulous low‑intervention viticulture.
