Tasting Note

Apricot and white-peach aromas with honeysuckle, orange blossom and honey; full-bodied, silky texture, white-pepper lift and pronounced mineral/saline finish (long and precise).

Food Pairing

Western: foie gras, seared scallops, lobster with beurre blanc, roast chicken with morels, soft goat cheeses. Asian: miso-glazed salmon, Thai green curry, Vietnamese caramelized fish (ca kho), richer sushi (tuna).

Production Method

Hand-harvested Viognier; gentle pressing, indigenous-yeast fermentation partly in 300L French oak; ~12 months élevage (20–40% new oak reported), minimal intervention.
