Tasting Note
Mineral-driven, crystalline Chardonnay: apricot and honeyed stone fruit, green apple, petrol and wet-stone notes with warm brioche and subtle smoke; concentrated, vibrant acidity, saline minerality and a very long, persistent finish.

Food Pairing
Western: lobster with beurre blanc, roasted chicken or pork with cream sauce, mushroom risotto, Dover sole meunière. Asian: miso-glazed black cod, seared scallops with soy-citrus, sushi/sashimi (fatty tuna), Cantonese-style steamed fish.

Production Method
100% biodynamic viticulture; hand-harvested with rigorous sorting, native-yeast fermentation and élevage in (mostly) new oak barrels, aged on lees with minimal intervention.
