Tasting Note
Ripe red and dark berries, spiced plum and cherry, floral lift, wet-stone minerality and a subtle meaty/forest-floor note. Silky, fine-grained tannins with vibrant acidity and a long, resonant finish.

Food Pairing
Roast duck, duck à l’orange, beef bourguignon, mushroom risotto, roast lamb; Asian: Peking duck, miso-glazed salmon, char siu, mushroom hot pot, shiitake-based dishes.

Production Method
Biodynamic viticulture, hand-harvested with severe sorting; native-yeast fermentation and élevage in French oak with minimal intervention and light/no filtration. Low yields and barrel-by-barrel bottling.
