Tasting Note
Concentrated dark red and black fruits with violets, Asian tea, exotic spice, smoked-duck/hoisin, leather and earth; full-bodied with fine-grained tannins and a long, saline finish.

Food Pairing
Western: roast duck, beef bourguignon, lamb, mushroom risotto. Asian: Peking/Cantonese roast duck, char siu, miso-glazed fish, mushroom stir-fries, yakitori.

Production Method
Biodynamic viticulture with severe green-harvesting and very low yields; hand-harvested, indigenous-yeast fermentations in tailor-made wooden vats, élevage in new François Frères oak, bottled without fining or filtration.
